Thanks a ton, but I'm a bit lost with the first thing. You said edit a profile (I'm trying to create a new one as I don't have any) but I can't see a 'Java Executable' option anywhere.
Maybe that's a Windows-specific option? In any case, the error I get when trying to open Optifine's.jar file on macOS is: To use the “java -jar OptiFine1.12.2HDUC7.jar” command-line tool you need to install a JDK. So if I could fine that java, maybe I could point it to that in the terminal instead of having to install the command line tool on my system. I run High Sierra on my Mac, but I've had it since before Lion came out, so I would guess that the OS updates since then have just not removed it.
Also, I'm slightly curious why you capitalize the 'M' in macOS Whoops, I just never really noticed or remembered it being lower-case. It looks wrong to me, so i think that I just subconsciously auto-corrected that lack of capitalization in my mind whenever I read it, treating it like a typo or something written by some kid who doesn't care about proper capitalization in their casual writing.
I run Minecraft on my Mac, and I use Optifine. I don't have the Java Development Kit, and I've never encountered this issue.
When I install Optifine for each new Minecraft update, all I need to do is double-click on the Optifine.jar file, select the location of 'minecraft' folder in /Library/Application Support, and let the program run to create the Optifine version of Minecraft. MacOS comes with Java, and automatically updates it's local copy of Java regularly, so you don't need to download anything else to run the Optifine.jar file you downloaded. All you need to do is double-click on it, and it should work. If that's not working, that's not normal.

Maybe try downloading Optifine again. It's possible that the first copy you downloaded was corrupted, or the download didn't finish before you tried to open it.
